Orange Cranberry Muffins
Makes About 14
Adapted From Branny Boils Over
2 Cups Flour
3/4 Cup Sugar
1 tsp Salt
1 tsp Baking Powder
1/4 tsp Baking Soda
2/3 Cup Buttermilk (or 2/3 Cup of Milk + 1 Tbs Vinegar combined)
6 Tbs unsalted Butter, melted
1/3 Cup Orange Juice
1 Large Egg
1 Tbs Grated Orange Zest
1 1/2 Cups Fresh Cranberries
Preheat Oven to 350 degrees.
Combine flour, sugar, salt, baking powder, and baking soda together in a large bowl.
In a medium bowl, whisk buttermilk, melted butter, orange juice, egg and zest.
Gently fold the buttermilk mixture into the flour mixture to combine, do not over mix.
Next, add cranberries to batter and fold to incorporate -- again, do not over mix.
Spray muffin tin with non-stick spray. Add batter to tins.
Bake for 18-20 minutes or until toothpick comes out clean. Enjoy!
*TheSpottedLamb Tip: Save your used orange rind! Once muffins go into the oven, place your orange rind in a medium pot. Add water, some cloves and cinnamon. Place on stovetop and simmer throughout the day to enjoy the warm scents of fall! Be sure to check the pot often and add water as needed*
