Well, I have a huge crate of fresh blueberries sitting in my fridge....and a never ending craving for chocolate on my brain....so I decided to combine the two, to create a muffin delight reminiscent of those amazing chocolate covered blueberries I mentioned above. Watch out, these will be gone before day's end!! :)
I added a few more spices (which I think was KEY) and of course,
the not-so-secret ingredient: chocolate chips!
Makes Aprox. 12-14 muffins
3 cups Flour
1 1/2 cups Sugar
1 tsp Salt
4 tsp Baking Powder
1 tsp Cinnamon
2/3 cups Vegetable Oil
2/3 cup Milk
1 tsp Vanilla
2 cups Blueberries
1 cup Chocolate Chips
Preheat Oven to 400 degrees. Lightly spray Muffin tins with cooking spray, or line with liners and set aside.
In a large bowl, combine all dry ingredients: flour, sugar, salt, baking powder and cinnamon. Stir to combine.
In a 2 cup measuring cup, measure out vegetable oil, next add the eggs and vanilla to the measuring cup. Fill the remainder of the cup with milk until liquid measures 2 cups.
Add liquid to dry ingredients and stir to combine.
Next gently fold in blueberries and chocolate chips until evenly distributed throughout the batter.
Spoon batter into the muffin tins, filling to the top.
Bake for 20-25 minutes until golden and toothpick comes out clean.
Let cool to room temperature, and enjoy!
