They are going to be known from this dinner on in our house as: 'Date Night Dogs' -- Corn Muffins w/Split Hot Dogs baked inside!
A quick, easy, and kid-approved recipe that makes getting ready for a date night a little easier -- 'cause I am sure many of you know just how hectic getting ready for a date night can be!
DATE NIGHT DOGS
MAKES APROX 9
INGREDIENTS:
1 Cup Flour
1/3 Cup Yellow Corn Meal
1/8 Cup Sugar
1 Tsp Baking Powder
1/2 Cup Milk
1/8 Cup Vegetable Oil
1 Egg, Beaten
3 Bun-Length Turkey Franks (I used Nitrate Free)
Mini Bunt Pan or Muffin Tin
Directions:
Heat oven to 400 degrees. Grease Bunt/Muffin Pan. In a medium bowl, combine all dry ingredients until well incorporated. Add wet ingredients and stir to combine.
Divide and cut each bun-length dog into thirds. Take one third of the cut dog and slice lengthwise. Repeat for the remaining thirds (you should end up with 18 pieces of hot dog).* Place two pieces of dog in each bunt/muffin cup. Spoon muffin batter on top of hot dogs (don't worry if they aren't completely covered, the batter will rise as it bakes.
Bake in oven until tops turn golden and tester comes out clean -- about 12-15 min, depending on the type of pan you use.
* If you have younger kids and are worried about choking, dice the dogs into small cubes instead.
