When I first began my quilting adventure, I was unsure what batting to use.  I would stand for an hour or more in the batting section of Joann’s just starring at the endless possibilities in front of me – cotton, polyester, blends, weight, pre-shrunk, size, packaged, rolled???  I hadn’t a clue.  But, because I don’t like to ask for help, I decided to just make my best educated guess and go for it: a packaged, crib size, polyester blend batting.  Well, I soon discovered that I had made the wrong choice…for me at least.  First off, when I took the packaged batting out of its wrapper, it had more wrinkles than the load of laundry that has been sitting in my dryer for the past day-and-a-half (ooops!), which made it extremely difficult to get my quilt to lay flat.  The size I chose was right on, but the material was not.  I found the polyester blend to be almost slippery while I was sewing…which led to a lot of bunching and stretching, resulting in a very funky looking quilt.

After doing some more quilting research online, I decided to give Warm & Natural’s 100% cotton rolled batting a try.  LOVE IT!  And, after finding myself making countless numbers of trips to the fabric store to cut more yardage of this batting for each quilt I made, I decided to just save myself the hassle (and gas) and buy the ENTIRE roll…all 40 yards of it!  I was able to use a coupon, which almost halved the retail cost!  And best yet, I can now measure out exactly how much batting I need, AS I need it – it’s prefect!

There I was hovered over a giant bowl of smashed bananas, sugar and cooking oil, when I realized….I’m out of Eggs!!  Now what!?  The troops were growing very restless and my brain didn’t seem to function quite right with my stomach growling in anticipation of the culinary delight I was trying to make: banana bread.  Yes, the neighbor is always an option, but I was still in my PJs and believe it or not, it was freezing outside!  Now way, I was going to attempt to make that happen.  My last resort?? Google.

I immediately stumbled upon this WONDERFUL suggestion for an egg substitute when such an occasion as mine should arise (or, as well as the recipe turned out, I might start using this substitution all the time!)

I know what you're thinking: That's A LOT of banana bread!  But, this will only last 2 days in my household :)
Oh Rats! I NEED An Egg! (subs for one egg)

1 Tablespoon of Vinegar + 1 teaspoon Baking Soda

Just to warn you (and you may have already gotten flashbacks of 6th grade science fair while reading that) but the combo does ‘erupt’ so just be careful!

The best part about this emergency substitution recipe is that you can let the kids have at the batter and not worry about what microbial friends might be hiding in the mix!  For that reason alone, this eggless recipe might become a staple!
